Skimmed milk powder is defined as the powdered milk prepared by removing all the fat that only less than 5% of fat is remaining. During the manufacturing process, the cream is separated from the milk after heating it.

• Skimmed milk powder is mostly used in products based on reconstituted milk (yogurt, dairy dessert, ice creams), in chocolates, in confectionery, in baby food, in animal feeding.

• Ministry of health and family welfare(food safety and standards authority of India) have specified Food safety and standards (prohibition and restrictions on sales) regulations, 2011 which have mandated that Condensed milk sweetened, condensed skimmed milk sweetened, milk powder, skimmed milk powder, partly skimmed milk powder and partly skimmed sweetened condensed milk shall not be sold except under Indian Standards Institution Certification Mark.

• In the certification process, product testing is the most important stage as it determines whether the quality of the product meets Indian standards.
